(serves 6)
Aside from being tasty and delicious, this recipe is nutritious as well!
INGREDIENTS:
150g Large green lentils
150g Dhal
150g Red Lentils
150g Speckled beans
150g Beluga Lentils/Puy lentils/chickpeas or any combination of 5 assorted beans
2 Litres of cold water
1 Diced large onion
1Tablespoon Salt
METHOD:
Boil the above on a medium heat for approximately 1 ½ hours, until soft. Pour off excess water. In a separate saucepan , sauté the following:
3 Tablespoons olive oil
1 chopped onion
3 cloves chopped garlic
½ diced red pepper
2 Tablespoons coriander powder
2 Tablespoons cumin powder
When softened, add:
1 tin coconut cream
2 handfulS coarsely chopped fresh coriander
Salt and black pepper to taste
4 coarsely diced large tomatoes (including seeds and skin!)
Allow to simmer for 25 minutes until it reduces slightly.
Serve with brown, unpolished rice and chopped fresh coriander! Add a handful of chopped nuts, such as pecan or cashews.
This dish is highly nutrtious, freezes well and tastes even better the next day!
